Sausage, Spinach & Cheese Egg Casserole

An egg casserole is the perfect dish to make for Christmas morning. You can even assemble the whole thing the night before and bake it fresh on Christmas morning so that you feed your family after the gift opening madness ensues.  I know my kids always love to eat the sugar cereal from their stocking, which is a once a year treat every Christmas, but I always have a hearty protein packed spianch, sausage and egg casserole ready for them to eat with the sugar cereal.

Preheat oven to 400°. In a large skillet, heat 1 tablespoon of olive oil on medium heat. Add the sausage and fry until almost cooked through.

Added the onion and cook until just soft. Toss in the garlic and cook one minute longer. Remove mixture for heat and drain any excess fat.

Combine bread, rosemary and thyme in a large bowl. Add the sausage mixture and cooked spinach mix until combined. In a small bowl, whisk the eggs and half and half together and season with salt and pepper.

To assemble, transfer the bread mixture to a baking dish lightly sprayed with Bertolli Extra Light Tasting Olive Oil Spray. Sprinkle with mozzarella cheese. Pour egg mixture over the entire sausage mixture.

Bake at 400° for 30 minutes or until the egg mixture is set in the middle. Sprinkle with Parmesan and return to the oven until cheese is melted. Let sit 10 minutes before serving.

  • 1 Tbs Extra Virgin Olive Oil
  • 8 oz bulk pork sausage
  • 1/4 cup green onions chopped
  • 2 cloves of garlic minced
  • 1 lb white bread cubed
  • 2 tsp fresh rosemary chopped
  • 2 tsp fresh thyme leaves chopped
  • 8 oz frozen chopped spinach squeezed and minced
  • 1 ½ cups shredded mozzarella cheese
  • 2 eggs
  • 1 ½ cups half and half Salt and pepper to taste
