What to Make With What’s On Sale

So, we just got our credit card bill from December and wowzers – we spent a lot!  We had a house full of family for 2 weeks at Christmas, went skiing and ice skating and had to buy gifts for 25 people, so it all added up quickly!  I’m going on a tight budget this month to pay off my credit card in full, so meal planning is a MUST!   Here is what I am making for dinners this week with what’s on sale at Safeway.  All of these items below have been shared in the weekly ad preview or in a blog post, so I’m just putting together a menu based on a budget of $100 total for food for all meals for the week.  This week’s meal plan is not gourmet or glamorous, but it’s under $50 for a family of 5 for dinners for the week.

  • Ground Turkey Lettuce Wraps with Brown Fried Rice
    • 2 packs of Open Nature Ground Turkey I bought last week for $1.99 each ($3.98)
    • 1 package of BirdsEye SteamFresh frozen mixed veggies, 1 egg and Minute Brown Rice for Fried Rice ($.99 + $.75)
    • Shredded Carrots and 1 bunch of green onions ($2.97)
    • 1 head Butter/Boston Bibb Lettuce – $3.99
    • From my pantry I’m using soy sauce and hoisin sauce for the lettuce wraps
    •  Total = $12.68
  • Smoked Dinner Sausage With Peppers and Onions and 1 Knorr Side Dish
    • Hillshire Farm Smoked Sausage – $2.99 with Green Tag Sale
    • Knorr Rice Side on sale for $1.00 and just $.50 after Just for U coupon
    • 1 Yellow Bell Pepper and 1 Green Bell Pepper ($2.99)
    • 1 Onion – $.99
    • Total= $7.47
  • BBQ St. Louis Style Pork Ribs With Baked Potatoes and Cole Slaw
    • Ribs on sale for $1.88 per lb. I bought 3.5 lbs for $6.58
    • 4 large baked potatoes $2.76
    • 1 Kraft BBQ Sauce – $.99 with Green Tag Sale
    • Fresh Express Cole Slaw Shreds $1.59
    • Lucerne Sour Cream 6 oz – $1.25
    • Total $13.17
  • Pizza Night with O Organics Salad
    • 2 Red Baron Pizzas on sale for 50% off – $1.99
    • O Organics Salad Blend $2.50
    • 1 Roma Tomato and 1 Cucumber ($1.98)
    • Using salad dressing from my pantry
    • Total $6.47
