Cottage Cheese Stuffed Avocados
- 1 avocado
- 1/2 cup of cottage cheese
- 1/4-1/3 cup of quartered grape or cherry tomatoes
- 1 Tbs toasted sunflower seeds
- slack pepper (to taste)
- salt (to taste (optional))
How to Make Cottage Cheese Stuffed Avocados
Slice the avocado in half and remove the pit. In a medium-sized bowl, combine cottage cheese with tomatoes. Fill avocado halves with the cottage cheese mixture.
Top with toasted sunflower seeds, black pepper, to taste, and a sprinkle of salt if desired.
