Watermelon Feta Salad Recipe

Sweet watermelon, salty feta, and cool mint combined with a delicious zesty dressing make this watermelon feta salad a go-to staple for summer!

One of my most favorite things about spring and summer is fresh seasonal fruits, in particular melons with which I love to make this Watermelon Feta Salad.  This is the perfect salad to enjoy on a hot summer day, enjoying your family or a small group of friends in the yard.

It’s fresh and delicious with a sweet, yet savory taste from the feta cheese.  The mint adds brightness and the rice wine vinegar ties it all together!

It’s perfect for any backyard BBQ or as a salad you take to a friend’s house.  If you have fresh mint growing in the garden, it would make an amazing salad.

Watermelon Feta Salad With Mint Recipe

Ingredients:

  • 1 sweet, seedless watermelon, cut into bite-size pieces
  • 1/4 cup olive oil
  • 1/4 cup rice vinegar
  • pinch of black pepper
  • 3 ounces of feta cheese
  • 2-3 springs of fresh mint

How to Make Watermelon Feta Salad

On a clean work surface cube watermelon and transfer to a medium bowl.  Add oil, rice vinegar, and black pepper.  Toss lightly to coat.

Arrange watermelon on a serving platter.  If you’d like, you can serve on top of a bed of butter lettuce for presentation, but I prefer it directly on a plate.  Crumble feta cheese and chopped mint leaves over the watermelon.

Chill until ready to serve.  Before serving, add a pinch of ground black pepper over salad for contrast.

You may think it a strange combination, but trust me, it is one of my most requested recipes and it’s always devoured anytime I serve it by kids and adults alike!
