Cowboy Caviar With Chile Lime Dressing

Ingredients

  • 1 15oz can Kuner’s® Black Beans (drained, rinsed)
  • 1 15oz can Kuner’s® Navy Beans or Great Northern Beans (drained, rinsed)
  • 1 15oz can Kuner’s® Pinto Beans (drained, rinsed)
  • 1 15oz can Kuner’s Whole Kernel Corn (drained)
  • 2 large tomatoes seeded, diced
  • diced 1 jalapeno chile seeded, ribs removed, finely diced
  • 1/2 small red onion diced
  • 1/2 cup chopped fresh cilantro
  • juice of 1 - 2 limes
  • 1/2 cup olive oil
  • 1 tbsp chili powder
  • 1/2 tbsp salt
  • 1/2 tbsp pepper

Instructions

  • In large bowl, mix the beans, corn, tomatoes, jalapeno, onions and cilantro.
  • In a separate bowl or mason jar combine olive oil, lime juice, salt, pepper and chili powder to create dressing.  Stir or shake well to combine. Pour dressing over bean salad and stir until combined.  Serve immediately or cover and refrigerate several hours to blend flavors.
