Instant Pot Beer Braised Corned Beef and Cabbage

Delicious garlicky corned beef cooked in an instant pot with beer and finished under the broiler for a crunchy top and tender beef.

Ingredients

  • 2.5-3 lb. corned beef brisket including spice packet
  • 1 tablespoon grainy mustard
  • 4 cloves garlic
  • 1 bottle of beer any will do, but a lager is best
  • 1 cup water
  • 2 lbs red and gold potatoes quartered
  • 3 cups baby carrots
  • 1 head green cabbage cut into large wedges

Instructions

  • Place corned beef brisket on rack of instant pot, and cover with grainy mustard and spice packet.
  • Add the garlic cloves to the brisket and add the beer and water.
  • Cook for 90 minutes using the meat/stew setting or high pressure. Once time is up, quick release pressure.
  • Remove corned beef to a baking sheet and place under the broiler for 9-10 minutes.
  • In the Instant Pot add the potatoes, carrots, and cabbage to the liquid in the pot.
  • Cook at high pressure for 8-10 minutes. Do a quick-release before removing vegetables.
