Ingredients

  • 2 15 ounce can Kuner's Great Northern beans rinsed and drained
  • 1 cup oats
  • 3/4 cup shredded carrot
  • 1/2 cup onion grated
  • 2-3 cloves of garlic
  • 2 tablespoons lemon juice freshly squeezed
  • 1 egg beaten
  • 4 tablespoons snipped fresh parsley
  • 1 tablespoon cumin
  • 3 tablespoons olive oil
  • salt and pepper to taste

Instructions

  • Pulse peeled garlic cloves in food processor until finely chopped. Add oats and pulse until finely ground. Remove oats and garlic and place in a small bowl.
  • Place rinsed and drained beans into food processor with and pulse 3-4 times until beans are chopped, but not mashed. Whole and half beans may still be present and that's ok. Remove from food processor into large bowl.
  • Grate onion and carrot and slice parsley and add to bowl with beans, oats, garlic, egg, cumin, salt and pepper. Stir well until combined.
  • Form the mixture into patties. Mixture will be wet and sticky, but patties can be formed. Refrigerate patties for 1 hour so they hold their shape while cooking.
  • Heat 2 tablespoons oil in a large skillet over medium heat. Add patties. Cook for 6 minutes per side or until well browned. Try to flip only once.
  • Serve with balsamic glaze, fresh sliced tomato, lettuce, sliced avocados on a toasted bun.
