2 15ouncecan Kuner's Great Northern beansrinsed and drained
1cupoats
3/4cupshredded carrot
1/2cuponiongrated
2-3clovesof garlic
2tablespoonslemon juicefreshly squeezed
1eggbeaten
4tablespoonssnipped fresh parsley
1tablespooncumin
3tablespoonsolive oil
salt and pepper to taste
Instructions
Pulse peeled garlic cloves in food processor until finely chopped. Add oats and pulse until finely ground. Remove oats and garlic and place in a small bowl.
Place rinsed and drained beans into food processor with and pulse 3-4 times until beans are chopped, but not mashed. Whole and half beans may still be present and that's ok. Remove from food processor into large bowl.
Grate onion and carrot and slice parsley and add to bowl with beans, oats, garlic, egg, cumin, salt and pepper. Stir well until combined.
Form the mixture into patties. Mixture will be wet and sticky, but patties can be formed. Refrigerate patties for 1 hour so they hold their shape while cooking.
Heat 2 tablespoons oil in a large skillet over medium heat. Add patties. Cook for 6 minutes per side or until well browned. Try to flip only once.
Serve with balsamic glaze, fresh sliced tomato, lettuce, sliced avocados on a toasted bun.
