Ingredients
1cupblack beans
4eggsbeaten
2/3cupcherry tomatoes
2tablespoonscrumbled feta
1/2of a freshsoft avocado
Instructions
Heat a skillet to medium and spray with non-stick cooking spray. Cook black beans in the skillet until hot. Divide between 2 bowls and wipe out skillet.
Return the skillet to heat and scramble eggs. Spoon scrambled eggs over black beans.
Spray pan with non-stick spray, and add cherry tomatoes to char. Stir occasionally, so the tomatoes char and burst (about 5 minutes).
Pour tomatoes on eggs, add crumbled feta and freshly scooped avocado. Sprinkle with sea salt, if desired.
