Ingredients

  • 1 cup black beans
  • 4 eggs beaten
  • 2/3 cup cherry tomatoes
  • 2 tablespoons crumbled feta
  • 1/2 of a fresh soft avocado

Instructions

  • Heat a skillet to medium and spray with non-stick cooking spray. Cook black beans in the skillet until hot. Divide between 2 bowls and wipe out skillet.
  • Return the skillet to heat and scramble eggs. Spoon scrambled eggs over black beans.
  • Spray pan with non-stick spray, and add cherry tomatoes to char. Stir occasionally, so the tomatoes char and burst (about 5 minutes).
  • Pour tomatoes on eggs, add crumbled feta and freshly scooped avocado. Sprinkle with sea salt, if desired.
