Egg Roll in A Bowl

Chopped cabbage, deliciously seasoned ground turkey mixed with flavorful ginger and sesame soy sauce that just makes this egg roll in a bowl a perfect meal when you want something quick, cheap and healthy.

Ingredients

  • 1 lb. ground turkey or ground pork $3.50
  • 1 tablespoon sesame oil $.59
  • 6 green onions diced ($.89)
  • 1 teaspoon fresh ginger grated ($.49)
  • 5 garlic cloves minced ($.10)
  • 1/2 cup red onion diced ($.49)
  • 1 tablespoon garlic chili paste or sriracha ($.08)
  • 1 bag coleslaw mix ($1.50)
  • 1/2 cup shredded carrots ($.80)
  • 3 tablespoons soy sauce ($.30)
  • 1 tablespoon rice wine vinegar ($.21)
  • salt and pepper ($.10)

Instructions

  • Heat a large skillet over medium-high heat.  Add sesame oil, red onion, garlic, ginger and 2 tablespoons of the chopped green onion.  Cook for 1 minute until fragrant.
  • Add ground turkey to skillet and brown the meat, stirring frequently to break it up into small crumbles.
  • Once the ground turkey is cooked through, add the coleslaw mix and shredded carrots to the skillet.  Add the soy sauce, rice wine vinegar, and garlic chili paste.
  • Cook, stirring frequently until the cabbage is softened and the flavors are incorporated.
  • Add salt and pepper to taste.
  • Top with green onions and serve with sriracha on the side.
