Ingredients

  • 1/2 cup butter
  • 1/2 cup granulated sugar
  • 2 eggs room temperature
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup whole-wheat flour
  • 3 ripe bananas
  • 1 teaspoon vanilla extract
  • 1/2 cup pecans chopped

Instructions

  • Preheat the oven to 350-degrees.  Line the bottom of a 9x5 inch loaf pan with wax paper and grease with butter or non-stick baking spray.
  • With an electric mixer, cream the butter and sugar together until it's light and fluffy.
  • Add the eggs one at a time, beating well.
  • Sift the all-purpose flour, baking soda, cinnamon, nutmeg and salt over the bowl with the butter and eggs.  Stir to blend.
  • Stir in the whole wheat flour
  • With a fork, mash the bananas to a puree, then stir the nanas into the batter.  Add the vanilla and pecans and stir.
  • Pour the batter into the prepared pan and spread until level.
  • Bake for 50 to 60 minutes until golden brown.  Test for doneness by inserting a clean knife into the center and if it comes out clean, the bread is done.  Let the bread stand for 10 minutes before transferring to a cooling rack.
