Grilled Pesto Chicken Caprese

Tender chicken is marinated in a delicious pesto, then grilled and topped with fresh mozzarella cheese, tomatoes, basil, and a sweet balsamic glaze in this Grilled Chicken Caprese recipe.

Ingredients

  • 2 chicken breasts sliced lengthwise
  • 1/4 cup pesto
  • 8 oz fresh mozzarella cheese sliced
  • 2 vine ripe tomatoes sliced
  • 4-5 fresh basil leaves thinly sliced
  • balsamic glaze

Instructions

  • Heat grill to medium heat.
  • Slice the chicken breasts in half lengthwise.
  • Brush the pesto onto both sides of the chicken.
  • Grill the chicken - 5 minutes on each side.
  • When you flip the chicken top with fresh mozzarella cheese and the sliced tomatoes
  • Remove from the heat when the chicken reaches 160 degrees and the juices run clear.  The cheese will be gooey and melted.
  • Let the chicken rest for a few minutes to let the juices distribute evenly.
  • Top with fresh sliced basil and drizzle with balsamic glaze.
