1lemoncut into 1/8-inch thick slices
1lbcod filets
12ouncefresh whole green beans
2tspextra virgin olive oil
1/2tspkosher salt
1/2tspground black pepper
zest of 1 lemon
3Tbspgrated parmesan
3Tbsppesto
Instructions
Preheat oven to 450°. On one side of a rimmed baking sheet, place lemon slices down and top with cod. Add green beans to the other side of pan and drizzle with olive oil. Season fish and beans with salt and pepper.
Sprinkle parmesan and lemon zest over beans and toss to coat, then spread evenly on pan. Top cod with pesto and any left-over lemon zest. Cook in oven for 10-12 minutes, until cod easily flakes. Serve.
