Ingredients

  • 4 salmon fillets 5 -6 oz each
  • olive oil for grilling
  • 1/3 cup low sodium soy sauce
  • 2 garlic cloves minced
  • 2 tablespoons lemon juice freshly squeezed
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1/2 teaspoon sriracha sauce (or chile paste)

Mango Salsa

  • 1 mango diced into 1/4″ pieces
  • 1/2 cup red bell pepper diced
  • 1/2 cup red onion diced
  • 1 tablespoon jalapeno diced
  • 1 tablespoon mint thinly sliced
  • juice of 1 lime
  • salt and pepper to taste
  • a drizzle of olive oil

Instructions

Mango Salsa

  • Place all salsa ingredients in a small bowl.
  • Mix to combine.

Marinate the Salmon

  • Mix the marinade ingredients (soy sauce, olive oil, garlic, honey, sriracha and lemon juice) in a large bowl or food storage container. (I use a glass pyrex baking dish with a lid)
  • Place the salmon into the marinade flesh side down and turn to coat.
  • Cover and marinate the salmon for 1-hour min, up to 24 hours.

How to Grill Marinated Salmon

  • Remove the salmon from the refrigerator at least 20 minutes before grilling to allow it to come to room temperature.
  • Heat the grill to medium heat.
  • Brush the grates with oil
  • Drizzle olive oil over the salmon to prevent sticking to the grill
  • Place the salmon on the grill flesh side down (skin side up)
  • Cook for 5 minutes.
  • Turn and cook for 4-5 minutes more with the skin side down.
  • Remove from the heat and place on a plate or serving dish.
  • Top with fresh mango salsa and serve.
