Ingredients
4salmon fillets 5 -6 oz each
olive oilfor grilling
1/3cuplow sodium soy sauce
2garlic clovesminced
2tablespoonslemon juicefreshly squeezed
3tablespoonshoney
2tablespoonsolive oil
1/2teaspoon sriracha sauce (or chile paste)
Mango Salsa
1mangodiced into 1/4″ pieces
1/2cupred bell pepperdiced
1/2cupred oniondiced
1tablespoonjalapenodiced
1tablespoonmintthinly sliced
juice of 1 lime
salt and pepper to taste
a drizzle of olive oil
Instructions
Mango Salsa
Place all salsa ingredients in a small bowl.
Mix to combine.
Marinate the Salmon
Mix the marinade ingredients (soy sauce, olive oil, garlic, honey, sriracha and lemon juice) in a large bowl or food storage container. (I use a glass pyrex baking dish with a lid)
Place the salmon into the marinade flesh side down and turn to coat.
Cover and marinate the salmon for 1-hour min, up to 24 hours.
How to Grill Marinated Salmon
Remove the salmon from the refrigerator at least 20 minutes before grilling to allow it to come to room temperature.
Heat the grill to medium heat.
Brush the grates with oil
Drizzle olive oil over the salmon to prevent sticking to the grill
Place the salmon on the grill flesh side down (skin side up)
Cook for 5 minutes.
Turn and cook for 4-5 minutes more with the skin side down.
Remove from the heat and place on a plate or serving dish.
