Pineapple Pomegranate Guacamole

Ingredients

  • 3 medium avocados
  • 1/2 cup diced pineapple
  • 1/3 cup pomegranate arils
  • 1 finely diced jalapeño seeds and ribs removed
  • 1/4 cup finely diced red onion
  • juice and zest of 1 lime
  • 1/2 tsp kosher salt
  • 1/4-1/2 tsp cayenne pepper

Instructions

  • Scoop avocado flesh into a bowl and lightly mash with a fork. Add remaining ingredients and stir to combine. Serve immediately.

Notes

 If not serving right away, cover with plastic wrap, laying wrap directly on top of the guacamole to prevent browning.
 For a beautiful presentation, garnish with additional pomegranate and pineapple pieces.
For extra spice, use the whole jalapeño. The seeds and ribs carry extra heat!
