Lemony Greek Chicken and Potatoes

Savory chicken cooks in a flavorful lemon olive oil marinade alongside tender roasted potatoes in this Greek Chicken and Potatoes meal.   A perfect dish to prepare for a Sunday night dinner that the whole family will enjoy.

Ingredients

  • 4-5 lbs. Signature Farms Bone-in Chicken Leg Pieces
  • 1/2 cup olive oil
  • Juice of 2 lemons
  • 2-3 tablespoons dried Greek oregano
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4-5 potatoes peeled and cut into wedges
  • 1/2 cup water

Instructions

  • Preheat oven to 425 degrees.
  • In a medium bowl, whisk oil, lemon juice, oregano, garlic powder, salt, pepper and paprika.
  • Place the chicken and potatoes into a large roasting pan.  Pour the lemon olive oil marinade over the top and toss to coat.
  • Add 1/2 cup water to the roasting pan.  I like to add to the corner of the pan, to not disturb the seasoned chicken and potatoes.
  • Bake uncovered 60-70 minutes or until chicken and potatoes are done.
  • Baste chicken and potatoes several times during the roasting process. Broil last 5 minutes to crisp chicken and potatoes.
