Tuna salad is a light and delicious meal option when you want a high-protein, low-carb meal for lunch. You can prep this ahead of time and serve over a bed of lettuce, on a sandwich, with crackers or with parmesan crisps.

Ingredients
2 5-ouncecans of tunaI use Albacore
3tablespoonsof mayonnaise
1stalk of celery diced
2tablespoonsred onion diced
1 1/2tablespoonsof fresh parsleydiced
1tablespoonDijon mustard
salt and pepper to taste
Instructions
Drain the liquid from the tuna cans. In a medium bowl, combine the tuna, mayo, Dijon, diced celery, diced red onion, parsley, and black pepper.
Stir all the ingredients until combined. Taste for salt and add if needed. Typically it's not necessary as tuna is salty on its own.
Enjoy the tuna salad as a sandwich, with crackers, over a bed of crunchy romaine as a salad.
Notes
If you want a creamier texture - you can always add more mayo. I'm not a huge mayo fan, so I use the bare minimum to add moisture and bind the salad together.
