Avocado Shrimp Salad

Ingredients

  • 1 lb. Shrimp peeled and deveined, tails removed
  • 1/2 tablespoon O Organics Cajun Seasoning
  • 3 avocados chopped
  • 1 cup cherry or grape tomatoes sliced in half
  • 2 tablespoons Cilantro minced
  • 1 teaspoon jalapeno or Fresno pepper diced
  • 1 teaspoon fresno chili pepper diced
  • Juice of 2 limes
  • 1/4 plus 1 tablespoon olive oil
  • salt and pepper to taste
  • red onion diced (optional)

Instructions

  • Heat a large non-stick skillet over medium-high heat.  Add 1 tablespoon of olive oil.
  • Sprinkle Cajun seasoning blend over the shrimp in the skillet and cook for 4 minutes on each side until it's no longer translucent and cooked through.  Remove from the heat and allow to cool slighly.
  • In a large bowl, combine chopped avocado, tomatoes, minced cilantro, minced jalapeno, and shrimp. Add diced red onion if using.
  • Meanwhile, mix together olive 1/4 cup oil, the juice of a lime, salt and pepper in a small bowl until combined.  Pour it over the salad and enjoy.
