Ingredients
1lb.Shrimppeeled and deveined, tails removed
1/2tablespoonO Organics Cajun Seasoning
3avocadoschopped
1cupcherry or grape tomatoessliced in half
2tablespoonsCilantrominced
1teaspoonjalapeno or Fresno pepperdiced
1teaspoonfresno chili pepperdiced
Juice of 2 limes
1/4plus 1 tablespoon olive oil
salt and pepper to taste
red oniondiced (optional)
Instructions
Heat a large non-stick skillet over medium-high heat. Add 1 tablespoon of olive oil.
Sprinkle Cajun seasoning blend over the shrimp in the skillet and cook for 4 minutes on each side until it's no longer translucent and cooked through. Remove from the heat and allow to cool slighly.
In a large bowl, combine chopped avocado, tomatoes, minced cilantro, minced jalapeno, and shrimp. Add diced red onion if using.
Meanwhile, mix together olive 1/4 cup oil, the juice of a lime, salt and pepper in a small bowl until combined. Pour it over the salad and enjoy.
