Ingredients

  • 1 lb. Waterfront BISTRO Raw Shrimp peeled, deveined and tail removed
  • 1/4 cup almond flour or sub coconut flour
  • 1 egg beaten
  • 1/2 cup unsweetened shredded coconut flakes
  • cooking spray
  • Signature SELECT Sweet Chili Sauce for dipping, optional

Instructions

  • Start by cleaning the shrimp - remove the shells and tails and pat the shrimp dry.  It's easier to use when dry.
  • Place the almond flour in a bowl, the beaten egg in a separate bowl, and the unsweetened coconut flakes in a third bowl.
  • Dredge the shrimp in the almond flour first, then in the beaten egg, then place it into the unsweetened coconut flakes until it's fully coated.
  • Place the shrimp in the air fryer basket in a single layer.
  • Spray with non-stick cooking spray, (I used coconut oil spray).
  • Cook at 360° for 10-12 minutes.  You can check the shrimp at 10 minutes.  It's done when the coconut coating is golden brown.
