Preheat the oven to 350° F.
Lightly grease an 8" cast iron skillet with butter.
Place the pitted cherries, sugar, corn starch, cinnamon, vanilla extract, almond extract and lemon juice into the skillet. Stir to coat and set aside.
To make the biscuits
In a small bowl, combine the butter, flour, baking powder, salt, sugar. Using a fork, pastry cutter or your fingers, cut the butter into the flour mixture until it resembles a coarse meal.
Add the 1/2 cup boiling water and stir the batter until it is combined.
Heat the skillet over medium heat and bring the cherry mixture to a boil, stirring occasionally. Drop the biscuit batter in heaping tablespoons onto the cherries.
Bake the cobbler for 45 to 50 minutes or until the biscuits are slightly golden brown.
Serve with ice cream or whipped cream.
