Ingredients

  • 4 cups cherries pitted
  • 2/3 cup sugar
  • 2 tablespoons corn starch or arrowroot flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 2 tablespoons lemon juice

Drop Biscuits

  • 12 tablespoons cold unsalted butter cut into cubes
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 3 tablespoons sugar
  • 1 teaspoon salt
  • 1/2 cup boiling water

Instructions

  • Preheat the oven to 350° F.
  • Lightly grease an 8" cast iron skillet with butter.
  • Place the pitted cherries, sugar, corn starch, cinnamon, vanilla extract, almond extract and lemon juice into the skillet.  Stir to coat and set aside.
  • To make the biscuits
  • In a small bowl, combine the butter, flour, baking powder, salt, sugar.  Using a fork, pastry cutter or your fingers, cut the butter into the flour mixture until it resembles a coarse meal.
  • Add the 1/2 cup boiling water and stir the batter until it is combined.
  • Heat the skillet over medium heat and bring the cherry mixture to a boil, stirring occasionally.  Drop the biscuit batter in heaping tablespoons onto the cherries.
  • Bake the cobbler for 45 to 50 minutes or until the biscuits are slightly golden brown.
  • Serve with ice cream or whipped cream.
