Shrimp Egg Rolls

Easy shrimp egg rolls are inspired by Asian take-out, but because these are air-fried or baked, they are healthier than their traditional fried counterparts.

Ingredients

  • 1 lb. Waterfront BISTRO Small Raw Shrimp peeled and chopped
  • 1 tablespoon Signature SELECT Toasted Sesame Oil
  • 1 tablespoon ginger minced
  • 3 cloves of garlic minced
  • 3 large scallions chopped
  • 1 bag Signature Farms Shredded Coleslaw Mix
  • 2 tablespoons Signature SELECT Reduced Sodium Soy Sauce
  • 1 tablespoon red curry paste
  • 1 tablespoon rice wine vinegar
  • 12 egg roll wrappers
  • olive oil spray
  • Signature SELECT sweet chili sauce for dipping

Instructions

  • In a large skillet, heat sesame oil over medium-high heat.
  • Add the ginger and garlic and saute for 1 minute until fragrant.  Add the shrimp and cook until almost cooked through about 1 to 2 minutes.
  • Add the shredded cabbage mix, soy sauce, rice wine vinegar, and red curry paste.  Stir to combine.  Cook on medium-high heat for 2 to 3 minutes until the coleslaw mix is crisp, not soggy.
  • Rolling the egg rolls
  • Place egg roll wrapper on a clean surface with the points facing up and down in a diamond shape.  Place about 1/3 cup of the mixture in the center.  Fold the sides in first, then roll up from the bottom into a tight cylinder.  If needed, you can use a little water to seal the egg roll wrapper on the ends.  Repeat until all the egg rolls are filled and wrapped.
  • Spray all sides of the egg rolls with olive oil spray and place them into the air fryer basket.  Cook in batches of 5 or 6, depending on the size of your air fryer at 370° F for 7 minutes, turning halfway through until golden brown.
  • Serve right away with sweet chile dipping sauce on the side.

Notes

Notes: If you want a little more traditional flavor, you can add 1 tablespoon of hoisin sauce to the mix.  I left it out because it's higher in sugar.
If you plan to bake, place the egg rolls on a sheet pan and spray with olive oil spray.  Bake in a preheated oven at 375° for 10 minutes, turning halfway through, until golden brown.
