Slice the peaches, nectarines, plums or apricots and arrange on a platter.
Pit the cherries and cut in half and add to the platter. Add fresh mint leaves.
In a small mason jar or bowl, combine the juice of one lime, zest of the lime and 1 tablespoon of honey. Stir to combine. Drizzle the dressing over the salad, just before serving.
