Opal Apple Tart With Puff Pastry, Goat Cheese and Thyme

Ingredients

  • 1 sheet puff pastry
  • egg wash 1 egg plus 1 teaspoon water
  • 2 ounces goat cheese I used plain
  • 2 opal apples cored, thinly sliced
  • fresh thyme
  • 2 tablespoons honey - I used raw wildflower honey

Instructions

  • Preheat oven to 425° F.
  • Bring your puff pastry to room temperature.  Unfold the pastry and gently roll it out using a rolling pin to remove the fold creases.
  • Cut the pastry into 9 squares.
  • Set the squares onto a parchment-lined baking sheet.  Gently score the pastry about 1/4 to 1/2  inch from the edge with a butter knife, not cutting all the way through.
  • Brush the edges of the pastry with egg wash.
  • Spread a teaspoon of goat cheese over each pastry square, then top with the thinly sliced apples.  Arrange the apples overlapping diagonally over the goat cheese, using 5 - 6 apple slices for each tart.
  • Brush the apples with honey, then top with fresh thyme leaves.
  • Bake for 18 to 20 minutes or until the pastry puffs up and turns golden brown.
  • Remove from the oven and drizzle with extra honey just before serving.

Notes

Optional Serving Suggestion:
If you want to elevate the tart by including caramelized onions, you will first need to caramelize the sliced onions in a skillet in 2 tablespoons of butter for 30 to 40 minutes.  Layer the goat cheese, then the onions and top with apples, honey and thyme.
