Dijon Maple Glazed Ham

Ingredients

  • 9 - 10 lb. bone-in ham shank or leg
  • 1 cup water
  • 20-30 whole cloves

Ham Glaze

  • 1/2 cup maple syrup
  • 1/2 cup dark brown sugar
  • 1/2 cup freshly squeezed orange juice
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Instructions

  • Preheat the oven to 325° F.
  • Place ham into a roasting pan and pour 1 cup of water into the pan.
  • Score the ham diagonally with a sharp knife, just through the top of the smoked ham in two directions, creating a diamond pattern.
  • Insert whole cloves into the center of the scored diamond shapes.
  • In a small saucepan, mix together the maple syrup, brown sugar, orange juice, mustard, cinnamon and nutmeg.  Simmer for 2-3 minutes over medium-low heat, stirring often, until the brown sugar is dissolved.
  • Brush the ham with the glaze using a pastry brush, getting into the cracks and crevices.  You will have some glaze leftover that will be used for basting the ham while cooking.
  • Place the ham into the oven uncovered and cook for 1 hour and 30 minutes.  Baste the ham with the remaining glaze every 30 minutes.
  • Let the ham rest for 10 minutes before slicing.
