Ingredients
16ozSignature SELECT pasta - elbow and penne are the best
2tablespoonsLucerne butter
2tablespoonsall-purpose flour
1cupwhole milk
1cupLucerne heavy cream
4ozLucerne Monterey Jack cheeseshredded
4ozLucerne Pepper Jack Cheeseshredded
7ozSignature SELECT canned green chiles
1/2teaspoongarlic powder
1/2teaspoonground cumin
salt and pepper to taste
Instructions
Bring a large pot of water to boil and cook that pasta according to package directions. Reserve 1/4 cup of pasta water.
While the pasta is cooking, in a large pot, melt the butter over medium-high heat. Add the flour and whisk together to form a roux. Add the milk and heavy cream, whisking constantly until smooth.
Add the grated cheeses and stir until creamy. Add salt, pepper, garlic powder, and cumin and stir to incorporate. Add the green chiles and mix until combined.
Add the cooked and drained pasta plus 1/4 cup of the pasta water to the cheese mixture and stir to coat.
Serve with additional grated cheese, if desired.
Notes
While I recommended Monterey Jack and Pepper Jack Cheese, you can also use sharp white cheddar for extra flavor.
