Ingredients

  • 16 oz Signature SELECT pasta - elbow and penne are the best
  • 2 tablespoons Lucerne butter
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1 cup Lucerne heavy cream
  • 4 oz Lucerne Monterey Jack cheese shredded
  • 4 oz Lucerne Pepper Jack Cheese shredded
  • 7 oz Signature SELECT canned green chiles
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • salt and pepper to taste

Instructions

  • Bring a large pot of water to boil and cook that pasta according to package directions.  Reserve 1/4 cup of pasta water.
  • While the pasta is cooking, in a large pot, melt the butter over medium-high heat.  Add the flour and whisk together to form a roux.  Add the milk and heavy cream, whisking constantly until smooth.
  • Add the grated cheeses and stir until creamy.  Add salt, pepper, garlic powder, and cumin and stir to incorporate.   Add the green chiles and mix until combined.
  • Add the cooked and drained pasta plus 1/4 cup of the pasta water to the cheese mixture and stir to coat.
  • Serve with additional grated cheese, if desired.

Notes

While I recommended Monterey Jack and Pepper Jack Cheese, you can also use sharp white cheddar for extra flavor.
