Peanut Butter Blueberry Overnight Oats

Peanut butter and blueberries are combined to make classic PB&J flavored overnight oats that is easy to make and delicious for a fiber-filled and nutrient dense breakfast.

Ingredients

Overnight Oats

  • 1 5.3 oz vanilla Greek Yogurt or plant-based yogurt for vegan option
  • 1 1/4 cup almond milk
  • 1 tablespoons chia seeds
  • 1 cup rolled oats
  • 1/4 cup fresh blueberries

Layers/Toppings

  • 2 tablespoons homemade blueberry jam
  • 2 tablespoons peanut butter
  • more blueberries for garnish if desired

Homemade Blueberry Jam

  • 1 cup blueberries fresh or frozen
  • 1/3 cup water
  • 1 tablespoon honey
  • 1/2 teaspoon lemon extract

Instructions

  • In a medium bowl add the yogurt, almond milk, chia seeds and oats and stir until incorporated.  Add the blueberries and stir well.  Cover the bowl and place into the refrigerator for 2 hours or overnight.
  • Meanwhile, prepare the blueberry jam.  Place 1 cup of blueberries into a small saucepan.  Add the water and honey and bring to a boil.  Reduce to a simmer, stirring often, breaking up the blueberries with a spoon.   Simmer for 4-5 minutes until slighlty thickened.  Remove from heat and add the lemon extract.  Stir to incorporate.  Place the jam into a small mason jar or food storage container with a lid.  Refrigerate until ready to assemble the overnight oats.
  • When ready to assemble, heat the peanut butter in a glass bowl for one minute so that it is drippy and easier to layer over the oats.
  • In a 12 oz mason jar, or bodega glass, layer the oats, jam and peanut butter, followed by a dollop of oats on the top.  Top with fresh blueberries if desired.  The layers may get messy, but that is ok because it all gets mixed together when you eat it.   Either refrigerate and enjoy later, or eat right away. .

Notes

You will have some blueberry jam leftover.  Use it for a topping on toast, over waffles, or to make more overnight oats. 
Any berries will work here for the jam and topping.
