Ingredients
1ripe banana
2eggs
1/3cupmaple syrup or honey
1teaspoonvanilla extract
1/3cuppeanut buttermelted
1 1/2cupmilkI used almond milk
2 1/4cupsoats
1/4cupgolden flax meal
1 1/2teaspoonground cinnamon
1teaspoonbaking powder
1 1/2cupsmixed berries
1tablespoonalmondsoptional, may sub walnuts or pecans or skip
Instructions
Preheat the oven to 350° F.
Spray a 9x9" baking dish with non-stick cooking spray. We love coconut spray for baked goods.
Mash the banana with a fork in the baking dish. Add the eggs, milk, maple syrup, vanilla, and peanut butter. Whisk together until smooth.
Add the oats, ground flax meal, cinnamon, and baking powder and stir to incorporate the wet and dry ingredients. Gently fold in the mixed berries, leaving some on top for a pretty presentation. Top with your choice of nuts.
Bake for 30 minutes. Let it rest for 5 minutes before serving.
