Ingredients

  • 1 ripe banana
  • 2 eggs
  • 1/3 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1/3 cup peanut butter melted
  • 1 1/2 cup milk I used almond milk
  • 2 1/4 cups oats
  • 1/4 cup golden flax meal
  • 1 1/2 teaspoon ground cinnamon
  • 1 teaspoon baking powder
  • 1 1/2 cups mixed berries
  • 1 tablespoon almonds optional, may sub walnuts or pecans or skip

Instructions

  • Preheat the oven to 350° F.
  • Spray a 9x9" baking dish with non-stick cooking spray.  We love coconut spray for baked goods.
  • Mash the banana with a fork in the baking dish.  Add the eggs, milk, maple syrup, vanilla, and peanut butter.  Whisk together until smooth.
  • Add the oats, ground flax meal, cinnamon, and baking powder and stir to incorporate the wet and dry ingredients.  Gently fold in the mixed berries, leaving some on top for a pretty presentation.  Top with your choice of nuts.
  • Bake for 30 minutes.  Let it rest for 5 minutes before serving.
