Ingredients

  • 3 cups Signature SELECT® all-purpose flour
  • 1 ½ teaspoons baking powder
  • 1 ½ teaspoons Signature SELECT® baking soda
  • 3 tablespoons Signature SELECT® granulated white sugar
  • 1/2 teaspoon Signature SELECT® table salt
  • 1 tablespoon O Organics® caraway seeds optional
  • 1 stick 4 oz. Open Nature® European style butter, cold, cut up into 1/2-inch cubes
  • 1 1/4 cups Lucerne® buttermilk
  • 1/2 cup currants or Signature SELECT® dark seedless raisins
  • 1 large Lucerne® egg for brushing top

Instructions

  • Heat oven to 350°. Line the bottom of a baking sheet or cast-iron skillet with parchment and grease with non-stick cooking spray or butter.
  • Combine baking powder, baking soda, flour, sugar, salt, and caraway seeds in a large mixing bowl.
  • Add butter cubes and cut into the dry ingredients with a pastry cutter or with your fingers until they are the size of small peas. Stir in raisins and buttermilk; mix lightly with a wooden spoon until a dough just forms.
  • Turn dough out onto a lightly floured surface and knead slightly and form into one 7” diameter round, using more dough as needed since the dough is sticky.
  • Place on prepared baking sheet. In a small bowl, whisk the egg until combined; brush the top with egg. Use a sharp knife to cut an 'X' into the top of the loaf.
  • Place in oven and bake about 35 minutes until a toothpick inserted in the center of the bread comes out clean.
  • Cool on a wire rack, cut, and serve with Open Nature® European style butter and Signature SELECT® preserves of your choice.
