Ingredients

  • 1/3 lb. corned beef, sliced
  • 4 slices rye bread
  • 1 tablespoon butter
  • 1/3 cup sauerkraut, drained
  • 4 slices Swiss cheese
  • 2 tablespoons thousand island dressing, or Russian dressing

Instructions

  • If preparing homemade Russian dressing, combine all the ingredients in a bowl.
  • Heat a large skillet over medium heat.
  • Lightly butter one side of each slice of bread. Place the bread (buttered side down) on a plate to build the sandwich.
  • Layer the thousand island dressing, the sliced corned beef, the sauerkraut, then the Swiss cheese on the bread. Top with the other buttered bread, buttered side up.
  • Place the sandwich into the hot skillet. Toast for 4-6 minutes until each side is golden and toasted and the cheese is melted.
    Serve hot.
