Ingredients

  • 3 ounce cooked and shredded pork roast pork shoulder
  • 2 cups beef broth
  • 3 ounces ramen noodles
  • 1/4 cup thinly sliced carrots
  • 1/4 cup thinly sliced onion
  • 1 clove garlic minced
  • 1 Tbs minced ginger
  • 1/8 tsp kosher salt
  • 1/8 tsp black pepper

Optional

  • sriracha sauce
  • serrano pepper
  • scallion
  • cilantro
  • hard boiled or fried egg
  • sliced jalapeno

Instructions

  • Heat a 2 quart sauce pan over medium-high heat Spray with nonstick cooking spray. Add carrot, onion, salt and pepper. Sauté for 3 minutes, adding garlic and ginger the last 30 seconds.
  • Add broth and bring to a boil. Add noodles and cook for 3-4 minutes. Add shredded pork and serve.
