Savory Pumpkin Hummus

The perfect fall dip using pumpkin puree, 2 kinds of beans, garlic, lemon, cumin and an extra kick from cayenne pepper.

Ingredients

  • 1 15 oz can Kuner’s® Pinto Beans (drained, rinsed)
  • 1 15 oz can Kuner’s® Garbanzo Beans (drained, rinsed)
  • 1 15 oz can pure pumpkin puree
  • 3 tablespoons tahini
  • 3 tablespoons lemon juice
  • 1 teaspoon chopped garlic
  • 1 teaspoon cumin
  • ¼- ½ teaspoon cayenne pepper
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  • In large food processor, combine beans and pumpkin; process 1 minute or until almost smooth.
  • Add tahini, lemon juice, garlic, olive oil, cumin and desired amount of cayenne; process 30 seconds or until well blended, stopping machine and scraping sides of bowl as needed.
  • Taste for seasoning and add salt and pepper if needed.
  • Garnish with pomegranate arils, olive oil, cumin and pepitas if desired. Serve with crunchy veggies and savory crackers or pita chips.

Notes

Garnish with a drizzle of olive oil and cayenne pepper or pepitas. Serve with crackers, pita chips or pita bread.
