1large sweet onion
1large green bell pepper
16ozcooked & shredded beef roast
4slicesProvolone cheese
1cupLong Grain Brown Rice
1/2tspkosher salt
Instructions
1. Cook brown rice according to package directions. Set aside.
2. Spray a medium skillet with non-stick cooking spray and heat to medium. Sauté onion until translucent, about 3-5 minutes. Add bell pepper & salt, sautéing until onions are lightly caramelized, about another 10 minutes. If needed, add in a splash of water or beef broth if pan gets too brown. Scrape up brown bits on the bottom of the pan as you add any liquid. Add beef to the skillet & sauté just until hot.
3. To serve, scoop rice, then layer a slice of cheese over rice, then a portion of sautéed onion, bell pepper and beef on top. Serve hot!
