2/3cupvanilla non-fat Greek yogurtnon-fat plain Greek yogurt can be substituted
1cupfrozen mixed berries
1Tbsnatural-style nut butteri.e. almond butter or peanut butter, cashew butter or sunflower butter
1Tbsground flax seed
1tspmaple syrup or honeyoptional
1/8tspcoconut or vanilla extractoptional
Optional Toppings:
Fresh berries
Nuts or seedstoasted almonds, walnuts, pumpkin seeds, etc.
Coconutunsweetened, toasted or untoasted
Granola
Instructions
1. Add the yogurt, frozen berries, nut butter, and ground flaxseed, along with maple syrup/honey and extract if desired, to a mini sized food processor or similar. Cut any large strawberries in half or quarters so it blends easier.
2. Pulse to blend the mixture, just until smooth.
3. Use a spatula or spoon to scoop the mixture into a bowl and add toppings as desired. Enjoy immediately!
