Turkey Chili Taco Soup

Fresh ground turkey is combined with beans, tomatoes, jalapeno, peppers and taco seasoning to give you a one-pot meal of turkey chili taco soup.  Top it off with sour cream, shredded cheese, and cilantro for a delicious meal.

Ingredients

  • 1 tbsp olive oil ($.25)
  • 1 lb lean ground turkey ($3.50)
  • 1 medium onion chopped ($.32)
  • 1 bell pepper chopped ($.69)
  • 1 jalapeno seeded and chopped ($.20)
  • 14.5 oz can Kuner's petite diced tomatoes ($.88)
  • 15 oz can Kuner's no salt added kidney beans drained and rinsed ($.88)
  • 8 oz tomato sauce ($.50)
  • 16 oz Kuner's Southwest Refried Beans ($.88)
  • 2 tbsp taco seasoning ($.99)
  • 2 1/2 cups chicken broth ($1.99)

Instructions

  • In a large pot or dutch oven, heat olive oil, then brown the ground turkey over medium heat, breaking it up with a wooden spoon as it cooks.
  • When cooked through, add the onions and bell pepper and jalapeno pepper and cook 2-3 minutes.
  • Add canned tomatoes, beans, tomato sauce, re-fried beans, taco seasoning and chicken broth and stir to combine.
  • Bring to a boil, cover and simmer about 10-15 minutes.
  • Serve with your favorite toppings such as low fat sour cream, jalapeños, shredded cheese, chopped scallions, onions, or chopped fresh cilantro.
