Watermelon Feta Salad With Mint Recipe
Watermelon Feta Salad is a sweet, salty and fresh salad that makes the perfect side or starter for any BBQ or gathering.
Servings 6 servings
- 1 seedless watermelon, cut into bite-size pieces
- 1/4 cup olive oil
- 1/4 cup rice vinegar
- Pinch of black pepper
- 3 ounces of feta cheese
- 2-3 springs of fresh mint
On a clean work surface cube watermelon and transfer to a medium bowl. Add oil, rice vinegar and black pepper. Toss lightly to coat.
Arrange watermelon on a serving platter. Crumble feta cheese and chopped mint leaves over the watermelon.
Chill until ready to serve. Before serving, add a pinch of ground black pepper over salad for contrast.
