Prepare the anchovy butter: mix together unsalted butter, minced anchovy, lemon juice, salt and pepper— use immediately or refrigerate.
To build the campfire packets: place 2 sheets foil on cutting board. Prepare packets in following order: cooking oil, red onion, chicken breast, artichoke hearts, cherry tomatoes and white beans. Then, add anchovy butter and white wine to chicken packet.
Close first sheet of foil over packet and secure edges tightly, then fold over second sheet.
Place packets onto medium-high heat grill and cook for 15-18 minutes per side, or until all ingredients reach internal temperature of 165°.
While chicken is cooking, prepare the bruschetta. Grill bread on both sides— allow to toast crisp. Then, remove from grill, "scrape" with garlic clove, drizzle with extra virgin olive oil.
Open foil packet and tuck bruschetta into packet, serve and enjoy!
