Elotes - Grilled Mexican Street Corn

Savory grilled corn is topped with mayo, sour cream, chile powder, feta cheese and zesty lime juice to make these Elotes the perfect summer side dish for any cookout.

Ingredients

  • 6 ears of corn, husks removed
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 teaspoon garlic, minced (1 medium clove)
  • 1 tablespoon lime juice
  • 1/2 teaspoon chile powder plus extra for sprinkling as topping
  • 1/2 cup Cotija or feta cheese, crumbled

Instructions

  • Heat grill to medium/high heat
  • Place corn on the grill and cook for 10 minutes, turning frequently with tongs until the corn is cooked through and slightly charred
  • While corn is grilling, combine mayonnaise, sour cream, garlic, lime juice, and chile powder in a medium bowl and stir to combine.
  • Once corn is done, remove from grill and slather corn with mayo mixture, top with crumbled cheese, sprinkle with chile powder and top with fresh herbs like basil or cilantro (optional)
