Crockpot Posole Recipe

This best-ever Mexican Posole soup gets flavor from pork shoulder, hominy, chiles, as it stews in a crockpot all day.

Ingredients

  • 3 1/2 lbs pork sirloin or shoulder roast, cut into 3/4 inch pieces
  • 3-15 ounce cans of hominy drained
  • 1/3 cup ancho chili powder
  • 4 cups chicken broth
  • 2 tsp ground cumin
  • 1 Tbs dried oregano
  • 7 cloves minced garlic
  • 1 Tbs kosher salt
  • 1 tsp black pepper

Instructions

  • Combine all ingredients in crockpot.
  • Cook on high for 4 hours, or low for 8 hours. Stir and serve.
  • I like a squeeze of lime on my posole and my daughter likes to eat hers with a tablespoon of sour cream.
