Ingredients
2 1/2lbsbeef chuck roastcut into 1 inch cubes
1/2cupdry red winebroth can be substituted for the wine
1 1/2cupssour cream
1lbmushroomscut in half
1large oniondiced
5clovesgarlicminced
3Tbsall-purpose flour
1tspdried thyme
1 1/2tspkosher salt
1tspblack pepper
Optional
egg noodles or rice
fresh parsley
Instructions
To a crockpot, add onion, mushrooms, beef, garlic, thyme, salt, pepper and wine. Cook on low for 6-8 hours.
Stir beef mixture and remove 1/4 cup broth. Whisk flour into broth and stir into crockpot. Turn crockpot temperature to high and cook for 10-15 minutes.
Add sour cream and mix well. Serve over egg noodles or rice, if desired.
