1poundSignature SELECT ground Kobe beef
3/4teaspoonsalt
1teaspoonWorcestershire sauce
1teaspoonfreshly ground black pepper
1/2tablespoonunsalted butter
2medium onions, sliced into 1/8-inch thick slices
1tablespoondry sherry
3ouncesGruyere or Swiss cheese, grated
4sandwich rollslightly toasted
salt and pepper to taste
Instructions
For the onions: In a large non-stick skillet, heat butter over medium heat, add the onions, a pinch of salt and pepper and stir well. Cook for 25 to 30 minutes until onions are soft and caramelized. Add the dry sherry at the end and simmer until liquid evaporates.
For the burgers: Add Worcestershire sauce and ground beef to a large bowl. Gently form the beef into 4 equal patties. Season both sides with salt and pepper.
Remove the onions from the skillet and heat the skillet to medium high heat. Add the burger patties and cook, flipping until browned on both sides to 160 degrees internal temperature.
Reduce the heat to low and divide the onions evenly over the burgers. Top with the grated cheese and cover the skillet to cook 2 to 3 minutes until the cheese is melted. Transfer to the toasted buns or rolls and enjoy.
