Ingredients

  • 4 cups thinly sliced Brussels sprouts (about 2 pounds)
  • 4 clementines peeled and segmented
  • 1/2 cup pomegranate arils
  • 1/4 medium red onion thinly sliced
  • 3/4 cup shaved parmesan
  • 1/2 cup pecans toasted and chopped
  • Vinaigrette
  • 1/4 cup extra virgin olive oil
  • 2 Tbs apple cider vinegar
  • 4 Tbs clementine juice (about 2 clementines)
  • 1 1/2 tsp pure maple syrup
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper

Instructions

  • In a medium bowl, whisk together all vinaigrette ingredients. Set aside.
  • In a large bowl, combine all salad ingredients and toss with vinaigrette.
