Ingredients
16ozAdapTable Meals diced Pork in Mushroom & Wine
2tablespoonolive oil
8ozsliced mushrooms
1/2medium onion, thinly sliced
3garlic cloves, sliced or minced
1teaspoon fresh thyme
1/2cupchicken broth
1/4cupred wine
1/3cupheavy cream
1tablespoonfresh parsley for garnishoptional
salt and pepper to taste
Instructions
Heat 1 tablespoon olive oil in skillet and add sliced onions and garlic, cooking for 2 minutes until softened.
Add the sliced mushrooms, salt, pepper and fresh thyme to the skillet and cook until softened, about 5 minutes, stirring frequently. Remove onion and mushroom mixture to a plate off to the side.
Add 1 tablespoon olive oil to skillet until hot then add diced pork. Cook until browned and cooked through about 5 minutes.
Add mushroom and onion mixture back to the skillet with the pork and add chicken broth, red wine and heavy cream. Stir together and simmer for a few minutes for the flavors to incorporate.
Serve over egg noddles, potatoes or rice. Garnish with fresh parsley if desired.
