Healthy Apple Oatmeal Muffins

Ingredients

  • 2 1/4 cups whole rolled oats
  • 1 tsp baking powder
  • 1/2 cup raw local honey
  • 1/4 tsp kosher salt
  • 2 eggs beaten
  • 3/4 cup milk such as almond, cashew, or regular
  • 3 Tbs organic coconut oil
  • 1/2 apple diced
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat oven to 350 degrees Spray 12 muffin cups with nonstick cooking spray.
  • In a medium bowl, whisk eggs, almond milk, honey and salt. Stir in oats, cinnamon and baking powder, mixing evenly.
  • Pour melted coconut oil while continually mixing.
  • Scoop batter evenly into 12 muffin cups. Sprinkle about 2 - 3 teaspoons of the diced apple in the center of each muffin. Sprinkle on additional cinnamon if desired.
