2 1/4cupswhole rolled oats
1tspbaking powder
1/2cupraw local honey
1/4tspkosher salt
2eggsbeaten
3/4cupmilksuch as almond, cashew, or regular
3Tbsorganic coconut oil
1/2applediced
1/2tspground cinnamon
Instructions
Preheat oven to 350 degrees Spray 12 muffin cups with nonstick cooking spray.
In a medium bowl, whisk eggs, almond milk, honey and salt. Stir in oats, cinnamon and baking powder, mixing evenly.
Pour melted coconut oil while continually mixing.
Scoop batter evenly into 12 muffin cups. Sprinkle about 2 - 3 teaspoons of the diced apple in the center of each muffin. Sprinkle on additional cinnamon if desired.
