Blueberry Smoothie Bars

Ingredients

  • 2 cups of your favorite granola
  • 2 ripe bananas frozen
  • 3/4-1 cup O Organics™ frozen wild blueberries or fresh berries
  • 1/4 cup O Organics coconut cream the full-fat cream from a can of coconut milk
  • 1/2 cup raw cashews soaked overnight
  • 1 tablespoon fresh lemon juice

Instructions

  • Line an 8x8 pan with parchment paper. Sprinkle granola evenly on the bottom of the pan, so it covers the bottom.
  • Drain cashews first, then add the soft cashews to a food processor or high-powered blender, along with the coconut cream, blending until smooth. Scrape down the sides of the processor as you go, and pulse until the mixture is smooth.
  • Add bananas, and pulse until the mixture has an ice cream-like consistency. Add frozen blueberries and lemon juice, pulsing until everything is incorporated. The mixture can be as chunky or smooth as you like.
  • Scoop mixture on top of granola (it will be thick!), and carefully smooth the fruit mixture evenly over granola. Top with more blueberries and toasted coconut.
  • Freeze for 1 hour. Slice into bars. Store bars in the freezer. Remove to let thaw slightly before eating.
