Fried Egg Avocado Bowl

Ingredients

  • 1 tsp Signature SELECTâ„¢ olive oil
  • 1 medium or large avocado not too ripe
  • 2 Lucerne® eggs
  • 1 pinch of black pepper
  • Optional Garnish
  • fresh tomato
  • pico de gallo

Instructions

  • Slice the avocado in half and remove pit. Cut each half so it is flat on both sides and dig out a larger hole for the egg to sit in.
  • Heat olive oil in frying pan on medium heat. Place the avocado slices in pan, large opening side up, and break 1 egg into each opening. After about 2 minutes, carefully flip avocado over and cook about 3 minutes more. If you want your yolk fully cooked, break the egg yolk before flipping it over.
  • Sprinkle black pepper over the top, to taste. Serve with fresh salsa or hot sauce, if desired.
