  • 1 cup diced yellow onion
  • 1/2 cup diced carrots
  • 1/2 cup diced celery
  • 3/4 teaspoon kosher salt divided
  • 3 garlic cloves minced
  • 1 pound 85/15 ground beef
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried thyme
  • 3 tablespoons tomato paste
  • 1 ½ teaspoon Worcestershire sauce
  • 3/4 cup stout beer
  • 2 cups frozen green beans thawed and thoroughly drained
  • 3 cups prepared mashed potatoes heated through
  • 1 ½ cups white cheddar cheese divided

Instructions

  • Preheat oven to 375°. Spray a 12-inch sauté pan with non-stick cooking spray. Heat pan on the stovetop over medium heat. Add onion, carrots, celery, and 1/4 teaspoon salt. Sauce for 3-4 minutes until onions begin to soften and turn translucent. Add garlic and cook an additional minute.
  • Increase heat to medium-high and add ground beef remaining salt and pepper. Cook for 5-6 minutes until beef is no longer pink. Add tomato paste and stir for one minute. Stir in Worcestershire sauce and beer. Reduce heat to medium-low and let simmer 5 minutes, stirring occasionally.
  • Remove pan from heat. Place green beans over mixture in a single layer. Stir 1/2 cup cheese into potatoes and gently spread potatoes over green beans. Top with remaining cheese. Place pan in the oven for 30-35 minutes until cheese is melted. Serve.
