Ingredients

  • 3 eggs
  • 1/4 cup milk
  • 1, 20 oz package refrigerated hash brown potatoes
  • 6 slices Signature Farms® bacon cooked and crumbled
  • 1/3 cup sliced scallion
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Optional Toppings
  • fried eggs
  • avocado slices
  • salsa

Instructions

  • In a small bowl, whisk to combine eggs and milk. In a medium bowl, stir to combine hash browns, bacon, scallion, salt and pepper. Pour egg mixture over hash browns and stir.
  • Preheat waffle iron. Spray with non-stick spray. Add about 1/2 cup of hash browns for each waffle. Cook 6-8 minutes until golden brown. Repeat until all waffles are made.

Notes

Set oven to warm (about 170°) and place cooked waffles on a baking sheet in the oven to keep warm while making remaining waffles.
Frozen hash brown can be used instead of the refrigerated variety. Simply thaw and thoroughly blot with paper towels before use.
