1cupchopped tomato
1/2medium oniondiced
1/2cupfresh corn kernels
1jalapeñodiced (remove seeds and ribs for less heat)
1teaspoonolive oil
1/2teaspoonkosher saltdivided
1-15ouncecan Signature Kitchens™ black berinsed and drained
zest of one limeplus 1 tablespoon of the lime juice
2tablespoonschopped cilantro
Instructions
Preheat oven to 500º. Spray a rimmed baking sheet with nonstick cooking spray.
Toss tomatoes, onion, corn, and jalapeño with olive oil and 1/4 teaspoon salt.
Spread evenly on the baking sheet and roast for 15-18 minutes.
Place roasted vegetables in a mixing bowl and toss with black beans, lime zest and juice, cilantro and remaining salt. Serve warm or cold.
