BLT Pasta Salad With Avocado Dressing

We’re crazy for avocados and always excited about new ways to use them. Delight your family with a colorful BLT pasta salad topped with a bright, scratch-made avocado dressing. Make extra dressing to add to a variety of other meals.

Ingredients

BLT Pasta Salad

  • 4 cups  rotini pasta cooked according to package directions, cold water rinsed and drained
  • 8 slices cooked bacon cut into bite-sized pieces
  • 1 cup sliced tomato
  • 2 cup chopped romaine lettuce

Avocado Dressing

  • 2 medium avocados
  • juice of 1 lemon
  • 1 Tbs fresh basil
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp kosher salt
  • pepper to taste

Instructions

  • In a large mixing bowl, combine cooked pasta and bacon with tomato and lettuce.
  • In a blender or food processor, purée avocados, lemon juice, basil, salt and pepper. Slowly drizzle olive oil in the blender while turned on, until fully incorporated.
  • Pour dressing over ingredients and stir to combine. Serve.
