Peanut Butter Granola

A decadent homemade peanut butter granola recipe with toasted coconut and chocolate chips.

Ingredients

  • 3 cups old fashioned oats
  • 2/3 cup peanuts almonds, cashews or pecans can be substituted
  • 1/3 cup smooth peanut butter
  • 1/4 cup honey
  • 3 Tablespoons melted coconut oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup flaked coconut
  • 1/3 cup chocolate chips

Instructions

  • Heat the oven to 325 degrees F.  Line a large baking sheet with parchment paper.  Do not use wax paper.
  • In a large bowl, combine oats, peanuts, salt, ground cinnamon, and flaked coconut.
  • In a separate bowl or large measuring cup, combine peanut butter, honey, coconut oil and vanilla extract.  Microwave for 20 to 30 seconds until smooth and easily stirrable.  Stir to combine.
  • Combine the peanut butter mixture with the oats and nuts and stir until evenly combined.
  • Bake for 25 to 30 minutes, watching it closely so that the granola does not burn.
  • Once the granola has cooled, top with chocolate chips.

Notes

Store in a mason jar or plastic food storage container or bag that closes.
