Slow Cooker Barbacoa Beef

Ingredients

  • 1 3 lb. chuck roast or cross rib roast
  • 3 cloves of garlic minced (or 1 tablespoon of garlic powder)
  • 3 chipotle peppers in adobo chopped
  • 1 can diced green chiles
  • juice of one lime
  • 1/2 cup water or beef broth
  • 1 tablespoon cumin
  • 2 teaspoons dried oregano
  • 2 teaspoons salt or to taste
  • 2 teaspoons freshly ground black pepper

Instructions

  • Place the roast in the slow cooker.  Season the roast with oregano, cumin, salt, pepper, and garlic.  Add chipotle peppers, green chiles, and beef broth or water to the slow cooker.
  • Cook on low for 6-8 hours or high for 4-5 hours.
  • Shred the beef with 2 forks into the juices.  If using a cross-rib roast, discard any large clumps of fat leftover before shredding.
