Ingredients
1 3lb.chuck roast or cross rib roast
3clovesof garlicminced (or 1 tablespoon of garlic powder)
3chipotle peppers in adobochopped
1can diced green chiles
juice of one lime
1/2cupwater or beef broth
1tablespooncumin
2teaspoonsdried oregano
2teaspoonssaltor to taste
2teaspoonsfreshly ground black pepper
Instructions
Place the roast in the slow cooker. Season the roast with oregano, cumin, salt, pepper, and garlic. Add chipotle peppers, green chiles, and beef broth or water to the slow cooker.
Cook on low for 6-8 hours or high for 4-5 hours.
Shred the beef with 2 forks into the juices. If using a cross-rib roast, discard any large clumps of fat leftover before shredding.
